1/4 lb Bacon, chopped 1 T Parsley, finely chopped
1 md Onion, chopped 1 T Freeze-dried chives
3 ea Celery, rubs, chopped 1 ea Bay leaf
1 ea Clove garlic, crushed 1 t Brown sugar
1 ea Bell pepper, chopped 1/2 t Black pepper
8 oz Clam juice 1 t Tabasco
1 c Chicken broth 1 t Lemon juice
16 lb Tomato puree Ds Worcestershire sauce
Fry bacon in a heavy pot. Add onion, garlic, celery and bell pepper
and cook until onion is translucent. Add remaining ingredients, bring
to a boil, lower heat and simmer uncovered, stirring occasionally,
until sauce is thickened, 30 to 45 minutes.
