12 Hard-boiled eggs, peeled
3 tb Mayonnaise
1 tb Dijon mustard
1/2 ts Black pepper
1/2 ts Paprika
2 tb Sweet relish
2 tb Celery, finely minced
2 tb Green onion, finely sliced
1 tb Red pepper, finely minced
: Slice eggs in half lengthways. Gently scoop out yolks. Place
yolks, mayonnaise, mustard, black pepper and paprika in mixing bowl.
Mix thoroughly until creamy. Stir in remaining ingredients.
: With rounded teaspoon, stuff egg whites with filling.
Sprinkle with paprika. Use any extra filling for quick sandwiches.
