2 tb Soy margarine 1/4 c Flour
1 tb Onion or shallot; minced 2 c Vegetable broth
4 oz Mushrooms; thinly sliced
Heat a heavy bottomed pan and saute the onion and mushrooms in the
margarine. Cook about 5 minutes, stirring occasionally. Sprinkle with
the flour. Stir well, then slowly add the broth while stirring. Cook
until sauce begins to bubble.
Makes about 2 cups.
