3 c Sifted flour 2 c Sugar
1 ts Baking powder 1 c Pecans, finely chopped
1 ts Salt Caramel Icing:
1 ts Baking soda 2 1/2 c Sugar
1 ts Cinnamon 3/4 c Milk
3/4 c Oil 1 Egg
4 c Apples, finely chopped 1/2 c Sugar
(about 6) 1/2 Stick butter
1 ts Vanilla 1 ts Vanilla
2 Eggs
Preheat oven to 350 degrees. In a lg mixing bowl, sift flour, baking
powder, soda, salt, cinnamon. Add oil, apples vanilla. Beat at
md speed for 2 min. until well blended. In another bowl, beat eggs
until light yellow in color. Gradually add sugar continue beating
until light fluffy. Fold egg mixture into the apple mixture,
blending thoroughly. Stir in nuts. Pour into lightly greased 10"
tube pan. Bake at 350 degrees for 1 hr. 10 min. or until done.
Caramel Icing:
MIx 2 c sugar, milk egg bring to a boil. Brown 1/2 c sugar in
skillet, then add it to egg mixture while boiling. Boil until cool,
then add a little butter vanilla. Cool spread over cake. From:
