Cooking Preparation of the Recipe:
2 c Diced tomatoes - 1/4 c Diced green bell pepper
-(about 3 large) 1/4 c Plus 2 tbsp olive oil
1/2 c Fresh corn kernels 1/4 c Chopped fresh cilantro
1/2 c Diced English hothouse 3 tb Fresh lime juice
-cucumber or pickling 2 lg Garlic cloves, minced
-cucumber 1 Jalapeno chile, minced
1/2 c Sliced green onions 1/2 ts Ground cumin
Combine all ingredients in large bowl. Season to taste with salt and
pepper.
