1/3 c Canola oil 1 2" piece ginger
2 Scallions, thinly sliced -thinly sliced
1/4 c Orange juice Grated zest of 1 lime
1 Lemon, thinly sliced 1/2 ts Salt
2 tb Honey 1/4 ts Black pepper
Combine all the ingredients in a nonreactive dish or in a zip-top
plastic bag. Turn the chicken breasts during marinating to distribute
the flavors evenly. For best results, marinate for 4-6 hours in the
refrigerator.
Makes enough for 2 whole chicken breasts.
