Cooking Preparation of the Recipe:
1 ts Salt 1 c Mozzarella cheese --
2 c Zucchini slices Shredded
10 Eggplant slices 1/4 c Roasted pepper slices
2 tb Olive oil 1 tb Fresh basil leaves --
1 Pizza crust Chopped
Preheat grill. Lightly salt zucchini and eggplant. Brush with oil.
Grill on both sides until tender. Sprinkle crust with cheese. Top
with grilled vegetables, roasted peppers, basil and remaining cheese.
Place crust on grill 5 inches from coals. Cover and grill for 3 to 4
minutes until cheese is melted.
