2 tb Vegetable oil; 12 oz Great northern beans;
1/2 c Chopped onions; 2 c Water;
1/2 c Chopped celery; 16 oz (1 can) chopped tomatoes;
1/2 c Chopped carrots; 1/2 ts Dried basil;
1/2 c Chopped green peppers; 1/2 ts Dried oregano;
1 cl Garlic; minced 1 Bay leaf;
12 oz Cooked navy;or great Salt and pepper to taste;
-=OR=- 2 tb Parmesan cheese;
Heat oil in large saucepan. Add onions, celery, carrots, green pepper and
garlic. cook until tender, about 10 minutes. Add water if necessary to
prevent drying. Add beans, water, tomatoes and spices. Reduce heat to low
and cook 1 hour. Remove and discard bay leaf. Sprinkle cheese over soup
before serving.
