Cooking Preparation of the Recipe:

1 1/2 c Flour 1/2 c Nuts -- chopped
1/2 c Sugar 1/2 c Orange Juice
1 ts Cinnamon 1/3 c Cooking Oil
1/4 ts Nutmeg 2 Eggs -- beaten
1/2 ts Salt 1/2 ts Vanilla
1 ts Baking Powder 1 1/2 c Raw Apple -- grated

Preheat oven to 375 F. Coat twelve 2 1/2 inch muffin tins with
nonstick spray. In a mixing bowl, combine dry ingredients and stirn
in nuts. Blend thoroughly. In a separate bowl combine remaining
ingredients. Make well in dry ingredients and stir in apple mixture
just until moistened. Do not overmix. Spoon batter into tins, filling
3/4 full. Bake for 20 mins. Makes 12 large muffins.
