3 lg Unpeeled cooking apples 1 ts Ground cinnamon
1/4 c Light brown sugar; firmly 1 ts Ground nutmeg
-packed 1 ds Ground cloves
1 tb Pecans; chopped Vanilla ice cream or whipped
3 tb Honey -topping
1 tb Brandy
Cut a 1/4" slice from top of apples; core each apple to within
1/8" of bottom. Place each apple in a 10-ounce custard cup; set
aside.
Combine brown sugar and next 6 ingredients; stir well. Spoon into
apple cavities, drizzling excess over apples. Cover each cup tightly
with heavy-duty plastic wrap; fold back an edge of wrap to allow
steam to escape. Arrange cups in a triangle in microwave. Microwave
at HIGH 4 to 7 minutes or until almost tender, rotating triangle at
2-minute intervals. Top with vanilla ice cream or whipped topping.
Yield: 3 servings.
