Cooking Preparation of the Recipe:

2 1/2 c Water
2 Tea bags
1/2 c Fresh mint; chopped
1 Lemon peel strip 2" x 1/2"
2 c Apple juice or cider;
--unsweetened
1 tb Lemon juice
4 Mint sprigs (optional)

In a medium-size saucepan, bring the water to a boil over moderately
high heat - about 3 minutes. Pour the boiling water into a warmed
teapot and add the tea bags, mint and lemon peel; cover and steep
until cool - about 20 minutes. Remove and discard the tea bags.

Strain the tea into a 2-quart pitcher and stir in the apple juice and
lemon juice. Fill four 12-ounce glasses with ice cubes and divide
the apple-mint tea among them. Stir briskly and garnish each drink
with a mint sprig, if you like.
