1 Whole chicken breast,
-skinned and boned
1 lb Fresh broccoli, trimmed
2 tb Vegetable oil, divided
1 md Onion, chunked
2 tb Water
2 md Red bell peppers, cored,
-seeded, and chunked
1/2 lb Fresh mushrooms, cleaned and
-quartered
1/3 c KIKKOMAN Stir-Fry Sauce
1/4 ts Red pepper, crushed
Cut the chicken breast into 1-inch squares and the broccoli flowerets
into bite-size pieces. Peel the broccoli stalks and cut crosswise
into 1/4 inch thick slices.
In a hot wok or large skillet over high heat, heat the oil. Add the
chicken and stir-fry for 1 minute. Add the broccoli and onion and
stir-fry for 1 minute. Add the water, cover, and cook for 2 minutes,
stirring once. Add the red bell peppers and mushrooms. Stir-fry for
2 minutes. Stir in the stir-fry sauce and crushed red pepper. Cook,
stirring, until the chicken and vegetables are coated with sauce.
