2 Onions,medium,sliced 2 c Lima beans
4 Zucchini,sliced 1 c Peas
4 T Olive oil Salt to taste
6 c Chicken stock Pepper to taste
In a 4-quart saucepan, saute the onions and zucchini in the oilve oil
for about 10 minutes or until browned. Add the chicken stock and
bring to a boil. Add the lime beans and peas. When mixture comes to a
boil again, reduce the heat and simmer for 20-25 minutes or until the
vegetables are soft. Add salt and pepper. Puree all ingredients
together in a blender. Return to saucepan, heat and serve.
