7 c Kellog's corn flakes;
. crushed to about 2 cups
1 Egg
1 c Skim milk
1 c All-purpose flour
1/2 ts Salt
1/4 ts Pepper
3 lb Chicken pieces; with or
. without skin
3 tb Margarine; melted
Place cereal into a shallow dish or pan. Set aside.
In a small mixing bowl, beat the egg and milk slightly. Add the
flour, salt and pepper. Mix until smooth. Dip the chicken in the
batter. Coat with cereal. Place in a single layer, skin side up, in
a foil-lined shallow baking pan. Drizzle with margarine.
Bake in a preheated oven at 350øF about 1 hour or until the chicken is
tender, no longer pink and the juices run clear. Don't cover the pan
or turn the chicken while baking.
