Cooking Preparation of the Recipe:



2 ea Egg whites
1 ea Egg
2 c Cooked rice
1/2 c Sugar
1/2 c Raisins
2 c Skim milk
1/2 ts Vanilla
1/4 ts Ground nutmeg
Ground cinnamon

Heat oven to 325*. Beat egg whites and egg in ungreased 1 1/2 qt
casserole . Stir in remaining ingredients. Spinkle with cinnamon to
taste. Bake uncov ered 50-60 minutes, stirring after 30 minutes,
until knife inserted halfway between center and edge comes out clean.
Serve warm or cold. Immediately re frigerate any remaining pudding.
