4 Mackerel (about 1 1/2 lbs. 1/2 ts Basil
Each), filleted, unskinned 1/2 ts Oregano
2 md Onions, sliced thin 1 Clove garlic, minced
3 c Tomatoes (fresh or canned), 1/2 ts Salt
Chopped-coarsely and drained Pepper to taste
1/2 ts Coriander, ground 1 1/2 tb Olive oil
1/2 ts Fennel, ground
1. Preheat oven to 350F. Wash mackerel. In casserole or baking pan,
layer mackerel fillets, skin-side up, with onions in between. 2.
Combine remaining ingredients. Pour over mackerel. 3. Bake,
uncovered, in preheated oven for 45 minutes to an hour, until onions
are cooked and fish is tender. Serve 6-8 *From The Rodale Cookbook*
