1/2 Bay leaf 2 lb Mackerel fillets, cut into
1/4 ts Thyme (or 2 sprigs fresh) Large pieces
1 tb Dehydrated onion flakes 4 3-oz. cooked potatoes
1 sm Garlic clove 1 tb Chopped fresh parsley or
Salt and pepper to taste Chives
Cover the bottom of a shallow saucepan with an inch of water. Add bay
leaf, thyme, dehydrated onion flakes, garlic, salt and pepper. Simmer
gently 3 to 5 minutes. Add mackerel pieces, cover saucepan and let
simmer gently for 15 minutes. Add potatoes; cover and cook 10
minutes. Transfer fish and potatoes to serving platter and keep warm.
Quickly boil down sauce until reduced by half. Strain sauce over
fish. Sprinkle with parsley or chives. Serve hot. *From Weight
