1 1/2 c Brown rice, short grain
-(about 4 cups cooked rice)
4 c Water
1/4 ts Salt
1/4 ts Cinnamon, ground
1/4 c Pine nuts, toasted
1/4 c Raisins
8 oz Fresh apricots; cut into
-eighths
Place rice, water, and salt in a large saucepan over medium-high
heat. Cover, bring to a boil, reduce heat to medium. Cook until
tender, about 30 minutes.
Transfer rice to a large bowl and sprinkle with cinnamon. Add
remaining ingredients to rice, toss, and season to taste. Serve
immediately.
