3 c Packed spinach 1 ts Cayenne
1 tb Ghee 2 md Tomatoes, chopped
2 md Onions, diced Salt
2 ea Garlic cloves, sliced 1 ts Garmam masala
1 ts Grated ginger
Wash drain spinach. Bring to a boil in a pan with a little water,
remove from heat drain very well. Chop spinach.
Heat ghee in a skillet saute onion garlic until they are golden.
Add ginger, cayenne tomatoes. Stir over a moderate heat for 3
minutes. Mix in the chopped spinach. Add salt cook, stirring, for
5 minutes. Sprinkle with garam masala continue to stir-fry for 3 to
5 minutes.
