Cooking Preparation of the Recipe:
1 Red or green pepper, 4 c Hot cooked penne pasta,
-cut in julienne strips -drained
-(or Both) 1 c Monterey jack cheese,
1 c Quartered, fresh mushrooms -shredded
1 Onion, coarsely chopped
Place veggies and 2 tbsp water in a covered microwaveable dish. Cook on
high for 4-5 minutes. Drain veggies and toss with pasta and cheese. Makes
2 servings.
