2 tb Vegetable oil 1 tb Dried shrimp, ground
1 Egg 1/2 tb Blachan
2 c Cooked rice 1 c Bean shoots
1/2 c Cooked potato, cubed 1 Spring onion, chopped
1/2 c Fried beancurd, cubed A little shredded lettuce
1/2 Onion, sliced 1 tb Fried shallots
Heat oil and lightly scramble egg, then add rice, potato,
beancurd and onion.
Stir fry over high heat for a minute or two, then add shrimp and
blachan. Keep stirring.
Toss in bean shoots and spring onion, and stir fry for a few
minutes. Keep frying over high heat until rice feels dry but
clingy.
Serve sprinkled with lettuce and shallots.
