3 md Ripe peaches, peeled, 1/4 c Pineapple juice
-pitted and sliced (about 2 ts Grated lemon peel
-1 1/2 cups) 1 ts Lemon juice
1 c Skim milk 1 ts Vanilla
Prep Time: 10 min. Freezing Time: 9 hr. Standing Time: 5 min.
In blender or food processor, blend or process all ingredients until
smooth. Pour the mixture into 4 (6 to 8 ounce) paper cups. Cover with
foil and freeze until partially frozen. Insert a wooden stick in the
center of each and freeze at least 8 hours or until completely
frozen. To serve, let the pops stand at room temperature for 5
minutes. Then gently peel the paper cup from the frozen pop.
NOTE: You can prepare these pops with other fruits such as apricots,
strawberries or bananas.
Makes 4 servings.
Per serving: 63 calories; 0.2 g fat (3% of calories); 1 g fiber; 1 mg
cholesterol; 32 mg sodium.
