Cooking Preparation of the Recipe:

2 c Flour
4 ts Baking powder
1/2 ts Cinnamon
1/2 c Sugar
1 1/2 c Apple juice
1 md Apple; peel, core, chopped
2 Ripe mashed bananas
1/2 c Cashews; chopped

Preheat the oven to 325. Lightly oil the muffin pan.

Combine the dry ingredients and mix well. Add the apple juice, apple,
banana, and cashews and stir well. Pour the batter into the muffin
pan, filing the muffin cups 2/3 full.

Bake for 35-45 mins, or until raised and lightly brown.
