3 md Potatoes -- scrubbed 3 Cloves garlic -- minced
2 md Zucchini -- trimmed and 1/3 c Water or chicken broth
Cubed 2 ts Fresh thyme -- chopped
2 ts Oil Salt and pepper
Cut potatoes into 3/4" pieces. Heat oil in skillet. Add potatoes and
stir-fry for 1 minute. Pour in water or broth, cover and cook over
low heat 4 to 5 minutes. Add garlic, zucchini, thyme and season with
salt and pepper to taste. Stir, re-cover and cook until vegetables
are tender. 96 calories and 2 grams fat.
