1 md Cucumber; peeled and cut
-in pieces
1 Bunch scallions; 5-6, cut
-into small pieces, include
-some of the green
16 oz Plain non fat yogurt; drain
-off liquid
3 tb Lemon; juiced, about 1/4c
1 ts Dried basil; or 1T fresh
-dillweed
2 tb Chopped parsley
2 cl Garlic
1 1/2 ts Salt; or to taste
1/2 ts Black pepper; or to taste
Place all in food proc and blend until smooth. Serve over salad
greens, pasta salad, etc.
