1/3 c Water 2 Red or Green Peppers, cut
3 tb Soy sauce -into strips
2 tb Cooking Sherry (optional) 6 Green Onions, cut into 2"
1 tb Corn starch -pieces
1 ts Sugar 1 lg Garlic Clove, minced
1 1/2 ts Minced fresh Ginger, or 2 Whole Chicken Breasts,
-1/2 ts dried ginger -skinned, boned, cut into
3 tb Corn oil, divided -1" chucks
Stir water, soy sauce, sherry, corn starch, sugar and ginger until
smooth; set aside. In large skillet heat 1 tbsp. corn oil over
medium-high heat. Add peppers, green onions, and garlic; saute 4
minutes. Remove. Add remaining 2 tbsp. corn oil; heat, Add chicken;
saute 5 minutes or until lightly browned. Stir corn starch mixture.
Add to skillet with vegetables. Stirring constantly, bring to boil
over medium heat; boil 1 minute. If desired, serve with rice.
