1 1/2 lb Beef Steak, Cut In Thin -chunks
Strips -- 1/4 x 1/4 x 2 1 tb Cornstarch
-inches 1/4 c Beef Broth
1 1/2 c Onions -- cut in 3/4" 2 tb Oil
----------------------SEASONINGS--------------------------------
2 sl Ginger -- minced Salt And Pepper
1 Clove Garlic -- crushed
-----------------------MARINADE---------------------------------
3 tb Soy Sauce 1/2 ts Sugar
1 tb Sherry
1. Marinate the beef for 15 to 30 mins.
2. Heat the wok on high heat. Add the oil. When it begins to smoke,
add the ginger and garlic, stirring for a few seconds.
3. Add the onions and stir-fry to separate them. Cook the onions
until they are somewhat transparent.
4. Remove the onions and add the beef to the wok. Stir-fry the beef
until it loses its pink color and return the onions to the wok.
5. Dissolve the cornstarch in the broth. Add it to the beef.
6. When it is slightly thickened, return the onions to the wok.
Serve immediately garnished with parsley or watercress.
