10 oz Pearl onions -- trimmed and
Peeled
2 tb Olive oil
Salt and pepper
1/2 ts Dried thyme
1 c Water
Cook the onions in the oil in a large skillet over medium high heat
until browned, about 3 minutes, stirring constantly. Season with
salt, peppre and thyme and add the water. Reduce heat to medium,
cover and simmer until the onions are tender and all the water has
evaporated, about 12 minutes. Add more water as necessary. Adjust
seasoning with salt and pepper. Serve 1 1/3 cups. Reserve 1/3 cup
for Cheddar Potato Pancakes Jardiniere. Reserve 1/3 cup for Spiced
Scallop Stew.
