3 Eggs 1 1/2 c Unsweetened desiccated
1 ts Vanilla -coconut
1 cn (300ml) sweetened condensed 1 Baked 9 inch pie shell
-milk Lime slices
Prep time: 10 minutes Cook time: 30-35 minutes
Be sure to use condensed milk, which is sweeter and thicker than
evaporated milk.
In medium bowl, using an electric mixer, beat eggs and vanilla until
frothy. Gradually beat in condensed milk until smooth. Stir in
coconut until well blended. Pour into pie shell. Bake in 350 F oven
30-35 minutes, until filling is light golden brown, shielding edges
of pastry with foil if they brown too much. Serve warm or cold
garnished with lime slices.
