14 sm New red potatoes, scrubbed 4 tb Red onion, finely chopped
3 tb Fresh parsley, chopped 1 lg Red pepper, chopped
2 tb Fresh dill -(optional)
6 tb Chopped green onions
--------------------------DRESSING-------------------------------
1/3 c Red wine vinegar 1 Clove garlic, crushed
3/4 c Olive oil Black pepper, liberally
2 ts Dijon mustard -ground
Boil potatoes in salted water until just tender (about 20 minutes).
Drain, cut in halves and let cool 5 minutes.
Combine red and green onions, pepper, dill and parsley with potatoes.
Whisk vinaigrette ingredients together and toss with potatoes while
still warm.
Serve hot or cold.
