Cooking Preparation of the Recipe:
1/2 c Freshly grated horseradish 1 sl Bread, crust removed
2 Egg yolks 1/4 c Milk
1 ts Salt 1 c Olive oil
1/4 ts Freshly ground white pepper 3 tb Sherry wine vinegar
Elegant Viennese Dinner Menu
Whisk horseradish, egg yolks, salt and pepper in medium-size bowl.
Soak bread in milk in small bowl 1 minute. Remove bread, squeezing
out excess milk. Whisk bread into horseradish mixture. Whisk in 1/4
cup of the oil drop by drop. Whisk in remaining oil in slow, steady
stream. Whisk until sauce is thick. Whisk in vinegar.
