1 qt Milk 1/2 ts Salt
1/3 c Yellow Cornmeal 1 tb Ground Cinnamon
2 tb Butter 1/4 ts Ground Ginger
1/2 c Molasses 2 Eggs
1/2 c Brown Sugar Light Cream
Preheat oven to 350 F. Scald the qt of milk in the top of a double
boiler. Add cornmeal and cook for 15 mins, stirring frequently. Then
add butter, molasses, sugar, salt, spices, and eggs. When well
blended pour into a buttered medium-sized casserole dish. Bake for 1
hour or until it is browned on top and the consistency of custard.
Serve warm, topped with cream.
Yield: 6 servings.
