Cooking Preparation of the Recipe:

1 tb Gelatin 3 tb Onion; minced
1/4 c Water; cold 1/4 c Vinegar; or lemon juice
3/4 c Beets; diced Lettuce
1 c Oranges, mandarin Mayonnaise
1/4 ts Salt Celery salt

Soften gelatin in cold water for 5 minutes. Drain juice from beets and
oranges, ading enough water to make 1-1/4 cups liquid. Heat juice to
boiling and add gelatin to this; then add salt, onion, and vinegar or
lemon juice (or combination of the two). Chill. when mixture is
slightly thickened, fold in beets and oranges. Pour into 6
individual molds and chill until firm. Unmolk on lettuce and serve
with mayonnaise with dash of celery salt.
