3 1/2 c Uncooked noodles 1/4 ts Thyme**
1 qt Tomatoes (32 oz.) OR* 1/4 ts Mexican oregano
1 cn Condensed tomato soup, 1 ts Mustard
-undiluted (10 3/4 oz.)** 1 lg Clove garlic, minced
1/4 lb Velvetta, melted OR 1 md Onion, finely chopped
1 cn Condensed cheese soup, 1/4 c Bread crumbs
-undiluted (10 3/4 oz.)** 1 cn Spam, finely chopped (12
1/4 ts Dried basil** -oz.)
*I use home canned tomatoes.
**If using soups, omit thyme and basil.
Cook noodles according to package directions. Drain, rinse and set
aside. In a 2 quart saucepan, brown Spam. Add tomatoes, garlic, onion
and spices. Bring to a boil. Reduce heat and simmer until thickened,
and onion and garlic is tender. Add Velveeta, Parmesan and mustard,
cook and stir until cheese is melted. Remove from heat and pour over
noodles. Mix well, making sure noodles are coated. Coat a casserole
dish with cooking spray. Sprinkle with bread crumbs. Bake at 350
degrees for 30 minutes.
**If using soups, saute Spam, onion and garlic until vegetables are
tender and Spam is browned. Combine soups and mustard with 1/2 can of
water. Add Spam mixture and mix well. Pour over noodles and mix well.
Pour into casserole dish, sprinkle with bread crumbs. Bake at 350
degrees for 30 minutes.
