1 1/2 lb Flounder fillets 2 c Hot, cooked rice
1 t Sugar 1 t Salt
1 T Soya sauce 2 T Dry sherry
1 T Grated ginger 3 T Vegetable oil
-lengths 4 Scallions cut into 2-inch
Place salted fish in a steamer. Either one of those oriental basket
steamers that fit on top of a kettle or a small canner or other pot
with a basket will do. In either case the fish should be placed on a
layer of aluminum foil. Get a small amount of water under the steamer
boiling/ Steam covered for 10 minutes. Transfer to serving platter
and serve with hot rice and additional soya sauce if desired.
