Cooking Preparation of the Recipe:

7 qt Tomatoes(peeled and
Chopped)
4 c Mild green chiles(chopped)
5 c Onion(chopped)
1/2 c Jalapenos(seeded/chopped)
6 Garlic cloves(chopped)
2 c Lemon juice
2 tb Salt
1 tb Pepper
2 tb Cumin
3 tb Oregano
2 tb Cilantro(chopped)

Combine all ingredients except cumin, oregano and cilantro in large
pot and bring to a boil, stirring frequently. Reduce heat and simmer
10 minutes. Add spices and simmer another 20 minutes, stirring
occasionally. Ladle not into clean pint jars, leaving 1/2" headspace.
Adjust lids and process in boiling water canner for 20 minutes.
