3 tb Butter
2 md Onion
1 ea Cabbage head
10 c Vegetable Broth (home made)
6 ea Slices Whole wheat bread
8 oz Fontina, sliced
1 c Parmesan grated
slice the cabbage into thin strips. slice the onions thinly. melt
butter under medium heat and then saute the onions about 5 or 6
minutes. Add the sliced cabbage and sweat stirring occasionally to
blend flavors. Add broth and bring to a boil. Cover and lower heat to
a simmer for about 1 hour. In oven proof bowls add a slice of wheat
bread in the bottom of each. Ladle in the soup and cover with a slice
of fontina cheese. Sprinkle with grated parmesan cheese. Place in a
