2 tb Butter
2 tb Chopped scallion
1 Green pepper, coarsely
-chopped
1 c Carolina rice
1 ts Salt
1 pn Saffron
1 c Consomme
2 c Boiling water
1) In a large saucepan, heat butter. Add scallion and Pepper Cook
until
browned. Add rice and cook, stirring Constantly, until rice is well
coated with butter. 2) Add salt, saffron, consomme, and water.
Bring to a Boil Cover and simmer
for 15 minutes, or until rice Has absorbed all the liquid. Serve
hot.
