2 lb Fresh pole beans 1 ts To 1-1/2 ts dried whole
1 sm Clove garlic -basil
1/4 c Cooking oil 1 ts Sugar
1 c Chopped green pepper 1/2 c Boiling water
6 sl Onion 1/4 c Parmesan cheese; grated
2 ts Salt
Remove strings from beans; cut beans into 1-inch pieces, and wash.
Saute garlic in hot oil until tender; remove and discard. Add
green pepper and onion to hot oil, and saute about 3 minutes over low
heat or until tender. Add salt, basil, sugar, and water. Cover, and
cook over low heat for 15 minutes or until beans are tender. Sprinkle
with cheese.
