1 lb Jumbo shrimp, cooked, 2 lg Peaches, peeled, halved,
-shelled, deveined, and -pitted, and sliced
-chilled 2 sm Cucumbers, peeled, and
2 tb Fresh lemon juice -thinly sliced
1 tb Cilantro leaves, finely 1/2 md Sweet red pepper, chopped
-chopped Balsamic vinegar or prepared
1/2 sm Head green-leaf lettuce -salad dressing
1. In medium-size bowl, combine shrimp, lemon juice, and cilantro;
cover and refrigerate 30 minutes.
2. Just before serving, divide lettuce among 4 chilled plates. Arrange
marinated shrimp, peaches, cucumbers, and red pepper on lettuce. Pass
balsamic vinegar or prepared salad dressing to serve on salad.
