DRESSING: Torn into bite-size pieces
2 tb Cider vinegar 1 Carrot
5 tb Olive oil 10 Cherry tomat halved
1 tb Dijon mustard 8 oz Smoked turkey -- julienned
1 ts Lemon pepper 4 ea Apples -- unpeeled sliced
1/2 ts Salt -- optional 1/3 c Walnuts -- chopped toasted
SALAD: Julienned
1 bn Watercress -- or romaine
Whisk together dressing ingredients and set aside. Just before
serving, arrange salad greens on a plaiter or individual plates. Top
with carrot, tomatoes, turkey and apples. Drizzle dressing over salad
and sprinkle with walnuts. Yield: 8 servings. Diabetic exchanges: One
serving (prepared with romaine and without added salt) equals 2 fat,
1-1/2 vegetable, 1 meat; also, 195 calories, 267 mg sodium, 8 mg
cholesterol, 10 gm carbohydrate, 6 gm protein, 16 gm fat
