2 tb Vegetable oil 10 Shrimp, cleaned
3 tb Butter 1/2 lb Mushrooms, sliced
4 Sole fillets 1 tb Chopped parsley
-Salt and pepper to taste 1/2 Lemon, juice of
1 c Flour
Heat oil and 2 tb butter in large fry pan over low heat. Sprinkle
fish with salt and pepper; coat with flour. Fry over low heat 3
minutes. turn and cook another 3 minutes or until done. Remove to
serving platter; keep warm. Add shrimp. mushrooms and parsley to same
fry pan. Cook for 3 minutes, shaking pan frequently. Stir in
remaining butter, lemon juice, salt and pepper. Pour over fish and
serve.
