8 oz Soy beans, soaked 5 tb Lemon juice
6 tb Olive oil 1 ts Liquid sweetener
2 lg Onions, chopped Salt, to taste
--------------------------GARNISH-------------------------------
2 tb Olive oil 3 tb Parsley, chopped
3 tb Lemon juice 1 ts Paprika
DIP: Rinse the soy beans, cover with fresh water cook for 2 hours or
until soft. Drain set aside.
Heat the oil in a pan saute the onions until soft, 5 minutes. Put
the onions oil in a blender with the cooked beans, lemon juice,
sweetener salt. Blend until smooth. Transfer the dip to a serving
bowl.
GARNISH: Mix all the ingredients together trickle the mixture over
the dip. Serve immediately.
VARIATION: Use chick peas instead of the soy beans.
