3 tb Olive oil 10 oz Pkg fresh spinach
2 md Onion(s), chopped -stems removed
-(abt 2 1/2 cups) -leaves coarsely chopped
2 lg Garlic clove(s), minced 8 oz Carton plain yogurt
Heat oil in heavy large skillet over medium-high heat. Add onions and
garlic and saut until golden brown, about 10 minutes. Add spinach and
saut just until wilted, about 2 minutes. Transfer mixture to large
bowl. Cool slightly. Add yogurt to spinach mixture and stir to blend.
SEason to taste with salt and pepper. Serve warm or at room
temperature.
