3 Or 4 zucchini (or yellow 1 Jalapeno pepper, seeded
-summer squash) sliced -and chopped
1 c Whole kernel corn Salt to taste
1/3 Onion, chopped
Mix above ingredients and cook (or steam) until tender. Drain and top
with: 3/4 cup grated cheddar or Monterey Jack cheese. Bake about 10
minutes at 350 .
