Cooking Preparation of the Recipe:

12 sm (To 14) New Potatoes, 1/4 ts Dried Whole Tarragon
-About 1 1/2 Lbs) -- 1/4 ts Salt
-unpeeled 1/4 ts White Pepper
3 tb St. James Country White 1 tb (To 2) Dijon Mustard
-Wine 1/4 c Green Onions -- thinly
1/4 c Olive Oil -sliced
2 tb Wine Vinegar 1/4 c Fresh Parsley -- minced

Wash potatoes and cook in boiling water until tender. Cut into
1/4-inch slices, add wine and let stand for 10 mins. Combine olive
oil and next five ingredients and stir well. Pour over potato
mixture. Add green onions and parsley and stir gently. Makes 8
servings.
