2 lg. onions, chopped
4 cloves garlic, minced
1/2 c. vegetable oil
1 1/2 tsp. kosher salt
1 tbsp. fresh ground pepper
1/4 tsp. cayenne
1 tbsp. paprika
4 tbsp. wine vinegar
5 1/2 c. ketchup
1 c. packed brown sugar
4 tbsp. tomato paste
1/4 c. apricot jam
Hot pepper sauce to taste
1 tbsp. Worcestershire sauce
1 c. soy sauce
1/2 c. honey
1 tbsp. lemon juice
2 tbsp. Dijon mustard
Saute onions and garlic in oil over medium flame until softened. Add salt, pepper, cayenne and paprika. Continue cooking approximately 10 minutes. Add vinegar, cook another 10 minutes. Add remaining ingredients. Simmer in covered pot for 1 hour. Stir frequently.
