1 c Strawberries, chpd 3 Eggs
3/4 c + 1T sugar 1/4 c Oil
2 c Flour 1/2 c Milk
2 ts Baking powder 1 ts Grated orange peel
1 ts Salt 12 Strawberries, cut fan-shape
----------------STRAWBERRY CREAM CHEESE SPRD---------------------
8 oz Cream cheese, softened 1/4 c Strawberries, crush OR chp
Sprinkle the chpd strawberries with 1T sugar and set aside. Sift
together flour, remaining 3/4c sugar, baking powder, and salt in lg
bowl. Beat eggs until light in a sm bowl. Add oil, milk, and orange
peel, and blend well. Add egg mixture to flour mixture. Stir until
mixed, 10-15 strokes. Drain chpd berries and fold into batter. Fill
paperlined cups 2/3 full. Bake 400 F, 15 mins, or until a toothpick
incerted in center comes out clean. Serve warm or cooled with
Strawberry-Cream Cheese Spread. Garnish each muffin with a fan-shaped
berry.
