1 c Raisins 1 ea Egg -- lightly beaten
1/2 c Water 3/4 c Unsweetened applesauce
1/4 c Margarine 1 tb Sugar substitute
1 ts Ground cinnamon 1 ts Baking soda
1/4 ts Ground nutmeg 1/4 ts Vanilla extract
1 c All-purpose flour
In a saucepan over medium heat, cook raisins, water, margarine,
cinnamon and nutmeg until margarine is melted; continue cooking for 3
minutes. Add all remaining ingredients. Spread into an 8-in. square
baking dish that has been sprayed with nonstick cooking spray. Bake
at 350 deg. for 25-30 minutes or until lightly browned. Yield: 16
servings. Diabetic Exchanges: One serving equals 1 starch, 1/2 fat;
also, 92 calories, 97 mg sodium, 13 mg cholesterol, 15 gm
carbohydrate, 2 gm protein, 3 gm fat
