Cooking Preparation of the Recipe:
4 Bananas Large 2 tb Flour
2 tb Sugar 1 tb Olive oil
2 tb Lemon Juice Egg white (beaten stiff)
1/2 ts Grated orange peel 1/2 c Water
3 oz Rum 1/2 c Olive oil (for frying)
Cut bananas into halves lengthwise. sprinkle with sugar, lemon juice,
orange peel, and Rum. Let stand for 2 hours.
Make a batter of flour, water, and 1 tablespoon oil, mixing well, and
blend in stiff egg white. Drain bananas, dip into batter and fry in
hot olive oil until just golden in color.
Sprinkle with sugar and serve hot.
